Ingredients:
4 cups peeled, cored, and diced apple
2 tablespoons lemon juice
1/2 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon cornstarch
1/4 cup apple juice or cider
6 to 8 large flour tortillas
4 tablespoons butter, melted
1/2 teaspoon cinnamon
3 tablespoons sugar
Directions:
Place first 4 ingredients in a pan. Heat for a few minutes to start cookig the apples. Mix together cornstarch apple cider until smooth. Add mixture to the apples. Bring to a simmer, stirring often until the sauce thickens. If the mixture gets too thick add a little more cider or some water.
Cut tortillas into wedges. Brush the tortillas with butter. Sprinkle with cinnamon and sugar and bake at 350 degrees F until golden brown, about 5-8 minutes. Serve tortilla chips with the warm apple pie dip.
